Assemble ingredients

In moderately heated pan add oil, add ginger + green chilli and sauté for few seconds, then add carrot + beetroot + french beans + green chilli and sauté for 3-4 minutes by covering.

Add chopped Capsicum and sauté for 2-3 minutes.
Add salt + garam masala and sauté further for few minutes more by sprinkling little water till veggies turn soft.
Veggies is cooked and allow to cool. Discard green chilli and keep aside.
Mash Potato and mix with the cooked Vegetable mixture, add chat masala and mix gently. - 4
Take bread slices.
Apply butter on any one side of each bread slice.
Spread a thick layer of mix veg filling keeping buttered side outwards. Cover it with another bread slice keeping buttered side outwards and give a gentle press. - 5
Put pan / tawa on low flame, add a small cube of butter and allow to melt, place bread slice, add little butter around the sides for better toasting and toast for around 2 minutes. Flip and toast the other side too.
Alternatively it can be toasted in sandwich maker which takes a minute or two.
Sandwich is done, cut diagonally and serve hot hot. - 6
