First time: Fish curry sauce

Nothing inspired me... but let's say my mom inspired me cos she had cooked it on a few occasions. I just wanted to try cooking it for the first time for my family without getting assistance. I think it's best paired with rice, maybe because that's the only one I have tried it with? We'd find out.
Steps
- 1
Clean the fish and rinse thoroughly in clear water. Slice your onions and fresh pepper thinly, dice your veggies, and then set aside.
- 2
Add your fish cuts into a pot and season generously with your curry powder, two knorr cubes, salt, onions, and fresh and dry pepper.
- 3
Place in heat and let it steam for about 3-6 minutes. Drain out the fish broth and reserve in a bowl.
- 4
In a frying pan, heat up your cooking oil and gently drop in your steamed fish cuts to fry on medium to low heat. Note: This step is optional.
If you prefer it steamed, then move over to 5.
- 5
In a saucepan, heat up 2-3 cooking spoon of oil and go on to stirfry your veggies for about 3-5 minutes.
- 6
Add a pinch of salt and 1-2 tbsp of curry powder. Then, pour in your fish broth to boil and adjust your seasonings. Be generous but careful while adding curry.
- 7
If you feel the need to go in with more water, go ahead. But ensure to readjust your seasonings.
- 8
Cover and allow to boil for about 5-7 minutes.
While it's boiling, prepare your slurry in a cup (a light mixture of cornstarch and water). The more the cornstarch, the thicker your sauce as it cools down. Do you! - 9
Add your fish at this point before introducing your slurry.
Be careful not to stir too much to prevent breaking the fish. - 10
Cover for a minute, then bring it down from heat.
- 11
Violà! Your fish curry sauce is ready to be paired with anything you could think of.
Enjoy, and don't forget to spread love.🙏💕
