Preheat oven to 350 degrees. Spray 9” pie pan.

In large skillet, cook chorizo over medium heat until done. With slotted spoon, remove chorizo from skillet and put into sprayed pan. Spread evenly across the bottom.

Discard all but 1 tbsp grease from skillet. Add potato and onion and cook 4 minutes, stirring frequently. Add peppers and cook for 2 minutes, stirring constantly. Add water, cover, and cook for 3 minutes without stirring.

Spoon vegetable mixture evenly over chorizo.

Whisk eggs and sour cream until evenly blended. Pour over vegetable mixture. Take a fork and press down any vegetables sticking up through the egg. Top with cheese.

Bake 35-40 minutes until knife inserted in center comes out clean. Let stand 5 mins, slice, and serve. I serve this with guacamole and sour cream. Enjoy!
