Start by cutting (if not already cut) and washing your chicken thoroughly. Place it in a large bowl and add the soy sauce and lemon or camanasi juice and let it sit for about 1-2 hours. While it marinating, deep frying your potatoes and carrots separately. Remove them and set them aside.

After the chicken is done marinating sear each side for about a minute or two then remove from the pan and set it aside. Using same pan, add your onions, then garlic and cook until translucent then you can add the chicken back to the pan and sauté and let the fat render. Pour the marinade from the chicken to the pan. Add chicken powder (if using) and pepper (You can add salt and fish sauce only as needed). Continue to cook until fish sauce is reduced.

If your using you can add the hotdogs at this point. then add the bell pepper, peas, and raisins (if you're using) and cook for another 2 minutes. Add tomato sauce and a bit of water. Then add tomato paste. Mix thoroughly. Cook until liquid is reduced and you see the fat coming out of the chicken.

Add hot water (or stock, optional) and scrape all the flavors out of your pan. Add brown sugar and bay leaves and put the lid on let it cook for about 5 minutes. After 5 minutes remove the pan and mix it to avoid burning. If you are using, you may add the hotdogs at this point and cook for about a minute.

Add back the potatoes and carrots you set aside and mix it in thoroughly. Put the lid back on and let it cook on medium low heat until veggies is cooked to your liking and the sauce is reduced. Remove from pan and transfer to serving plate. Share and Enjoy.
