Thai Bird Eye Chillies are not easily available afresh all the time. And store bought one's are either too exorbitantly priced or not at all good. Therefore when these are available, it's always a great idea to dry them up and store. That's what I did as well. Shade drying and Sun drying methods are good for these little fiery Chillies.
These are a must in many Thai and Southeast Asian cuisines. Not only that, these can be used in yummy Indian versions of Pasta and Noodles. These give the dishes a nice flavour and aroma.
They can be used in Soups, Salads, Stir fried dishes. It can be used as a condiment and also eaten raw both fresh and dried. These can also be used in a variety of sauces and marinades.
Bird Eye Chillies are good for digestion and also aid in the healing process of Stomach ulcers.

    Wash all the chillies thoroughly at first. Pat dry or leave them in a tray or a wide plate to dry up well.

    Now spread them on a tray or a plastic sheet. Sun dry them as needed. These get fully dried in three to four days. Or else these can be dried inside the house as well.

    I have done it in both the ways. Make sure to dry them well. Store in airtight containers and use them as needed. Enjoy!
