These are shade dried Italian, Thai and Indian herbs done at home sweet home.
It's practically very easy. Don't forget to wash them thoroughly. Allow to drain well as it is very important. Now just spread on a large plate or a tray or a plastic sheet and leave it under the fan for two to three days or as required. They are fully dried in a few days. That's it. As simple as that. These are not dried directly under the Sun.
It's a perfect example of easy-to-use life hacks.
Store for a Year or more without any difficulty. Fill them up in airtight containers and keep in a ventilated, less humid place. These dried herbs are so easy to use without any fear of their non availability. From Chutneys to Podis, From Daal to Frys, From Gravies to Curries to Stir Frys, From Pizzas to Gourmet Breads, these little flavourful herbs go a long way in whipping up some amazing dishes from different cuisines around the World. Parsley wasn't available and so I couldn't do that together with these but I could manage to do it separately later on. Let's get started then.

  • 250 gmThai Bird Eye Chillies
  • 250-300 gmGalangal/Thai Ginger
  • 60-70 gmHabanero Chillies

Steps

    Wash the leaves, herbs, chillies etc thoroughly under the running water rinsing well. Allow to drain until dry.

    Spread these on a plastic sheet or use trays whichever is convenient. Shade dry them under the fan inside the house. No need of drying in the Sun. As these are herbs, it's difficult to dry in the open. Little strong wind can blow them away. These doesn't require much of Sun drying too. Shade drying is enough for them.

    Store these in airtight containers for months together. There is no need to worry about the availability of the these amazing herbs. This is an easy and a fool proof method to store them for a long long time. Whenever you need to use them, use them liberally.
