Wash, peel, and dice the apples into evenly sized cubes. Place the apples in a small bowl and toss with lemon juice, a pinch of salt, pepper, and a drizzle of olive oil. Mix well.

Lay the chicken breast slices flat on a work surface. Place a small amount of diced apples along the length of each slice. Sprinkle with breadcrumbs and roll up tightly. Secure each roll with a couple of toothpicks. Don't worry if you have some apples left over.

Once all the roll-ups are ready, heat a drizzle of olive oil with a clove of garlic in a saucepan. Add the roll-ups and brown them on all sides, making sure the seams are sealed.

When the roll-ups are browned on all sides, add any leftover apples along with a bit more breadcrumbs, and pour in the beer to deglaze.

Once the alcohol has evaporated, add enough water for cooking, checking occasionally if more is needed. Lightly season with salt and cook, covered, over medium heat for about 30 minutes. Turn the roll-ups halfway through cooking.
