Ingredients

7 hrs + 40 min
4 servings
  1. 1 cupwhite chana/chickpeas soaked for 7 hours or overnight
  2. 2 cupwater
  3. 2 tablespoonsoil
  4. 1 teaspoonGhee
  5. 1 teaspooncumin seeds
  6. 1bay leaf
  7. 1 inchcinnamon
  8. 2cloves
  9. 1 tablespoonsgreen chilies and ginger paste
  10. 1/2 cupTomato puree/ 2 tomatoes finely chopped
  11. 1 teaspoonsalt or as needed
  12. 1/2 teaspoonturmeric powder
  13. 1 teaspoonred chilli powder
  14. 1 teaspoondhaniya powder
  15. 1/2 teaspoonroasted cumin powder
  16. 1 teaspoongaram masala/ chole masala
  17. 1 teaspoonkasuri methi
  18. 1 tablespoonsfresh malai / cream
  19. 1 teaspoonlemon juice
  20. 2 tablespoonsfresh coriander leaves chopped

Steps

7 hrs + 40 min
  1. 1

    Rinse the chickpeas at least thrice. Soak them in 3 to 4 cups of water overnight or for at least 7-8 hours.
    Drain the water and rinse them well. Pour water and pressure cook for 5 to 6 whistles.make sure your chana are soft and tender. If not,cook them for a lately longer.

    Heat oil and ghee in a large pot. Add cumin seeds and whole spices-bay leaf, cinnamon and cloves. When they begin to sizzle add the chilli ginger paste and saute for few seconds. Add the tomato puree and salt. Let cook until mushy, pulpy and thick.

    Add in red chilli powder, turmeric, garam masala, coriander powder and cumin powder. Saute until the masala begins to smell good, for about 1 minute.Add garam masala and kasuri methi. Add fresh malai mix it well and now cook until oil release.

    Now Add the boiled chana along with the chana stock or water (1 cups). Pour another If you don't puree the tomato masala, you will require lesser water.Cover and simmer for 15 minutes.When the consistency is thick,remove from heat. Garnish Chana masala with coriander leaves. Sprinkle some lemon juice if required.
