Ingredients

30 minutes
4 servings
  • 6-8baby eggplants (aubergine), stem removed, cubed
  • 4Potato, cubed
  • 6 clovesgarlic
  • 2 inchginger
  • 3green chillies
  • 1 tsp.cumin seeds
  • To taste, salt
  • 1/2 tsp.turmeric
  • To taste, chilli powder
  • 2 tsp.coriander powder
  • 1/2 tsp.cumin powder
  • 1/2 tsp.garam masala
  • 1 tbsp.dried fenugreek leaves
  • 1 tsp.amchoor powder (dry mango powder)
  • 1onion, chopped
  • 1tomato, chopped
  • As required, oil

Steps

30 minutes
  1. 1

    Coarsely grind ginger, garlic, green chillies in mortar & pestle. Set aside.

  2. 2

    Heat enough oil in wok and fry the potatoes till golden. Remove and set aside.

  3. 3

    Fry the eggplants till soft. Remove and set aside.

  4. 4

    Leave about 4 tablespoon oil in wok and add cumin seeds. Allow to splutter.

  5. 5

    Add the crushed masala paste. Fry on medium heat for 2 minutes.

  6. 6

    Add the onions. Give a mix and sauté till brown.

  7. 7

    Add the tomatoes and fry on medium heat for 2 minutes.

  8. 8

    Add all the spice except for garam masala, amchoor and dried fenugreek leave, give a mix and fry on medium heat till the tomatoes are soft and the spices are cooked.

    Add the fried potatoes and eggplants, give a mix and fry on medium heat for 3-4 minutes.

  10. 10

    Cover and cook on low heat for 5 minutes.

    Add garam masala, amchoor powder, and dried fenugreek leave, give a mix and simmer for 2-3 minutes.

    Serve garnished with cilantro.
