This dish was inspired by my teacher, Chef Camilo Hernández. My favorite way to prepare it is to season everything well for great flavor. I love enjoying it with a fresh salad.

Prepare the beef:
Place the beef in a pressure cooker with onion, garlic, and salt.
- Cook for 40 minutes. - 2
Prepare the sauce:
- Sauté onion, garlic, tomato, and Italian herbs in oil.
- Add salt to taste. - 3
Prepare the potatoes:
- Wash and cut the papas criollas into quarters if they are large. - 4
Heat plenty of oil in a skillet over medium heat.
- Fry the potatoes until crispy. - 5
Shred the beef:
- Remove the beef from the pressure cooker after 40 minutes and let it rest.
- Shred the beef. - 6
To serve:
- Place the fried potatoes on a plate.
- Add the shredded beef on top.
- Pour the sauce over the beef.
- Serve hot.
