Apple Roll Cake
Here's a different take on apple pie.

Dice the apples and spread them in a baking pan. If you like, add the raisins. Add the butter in small pieces and, if desired, sprinkle with cinnamon. Place in the oven at 400°F (200°C). Preheating is not necessary.

While the apples are baking, prepare the batter. Separate the eggs into whites and yolks. Start beating the egg whites until stiff peaks form. Gradually add the sugar while continuing to beat with a mixer. The meringue should increase in volume and become glossy. When you turn the bowl upside down, it should not fall out.

Add the yolks one at a time, beating after each addition until the mixture increases in volume even more.

Sift the flour with the baking powder. Add the flour mixture to the eggs in three parts, gently folding from the bottom up each time.

Remove the pan from the oven and cover the apples with the batter.

Lower the oven temperature to 340°F (170°C) and bake for 20-30 minutes. When a skewer inserted in the center comes out clean, it's ready.

You can serve the apple cake as is—it will be just as delicious. If you want to make it a roll, turn it out onto a kitchen towel and use the towel to roll it up.

Let it cool completely, then slice and serve.
