This one is an excellent Dessert, especially when you feel like having something sweet and desi. And this particular one fits this category of Indian special Desserts to the core. Yes, Indeed! Because it's made with Sabudana and whole Green Gram which is amazingly refreshing and flavourful plus a unique one too. The only thing is to soak both the Sago Pearls or Sabudana and the whole Green Gram. As simple as that. Nothing can beat it's taste. It just melts in the mouth and is rich in Calcium too making it even healthier and rich.
With just about a total of 4-5 ingredients, it's done. And it's done quite right too.
Not only is it easy and quick to make, but it's also absolutely amazing with a lovely texture and flavour.
My family's all-time favourite and a weekend special too. It's best served chilled but tastes equally great when had warm.

Wash and soak sabudana and whole green gram in enough water for about 4-5 hours. This is the first step towards making this delicious kheer. Sabudana can be soaked just for an hour. It would be enough. Boil them both and set aside until use.

Bring milk and sugar to a rolling boil on a high heat at first. Then lower down the heat to a low when it starts boiling vigorously. Also add cardamom powder. Mash the green gram slightly. Do not make a paste of it.

Add soaked and boiled sabudana and partially mashed green gram to the milk as well. Give it all a good mix. Allow it to simmer for the next 15-18 minutes.

It gets done in no time at all. Simmer until it thickens to a desired consistency. That's it. Adjust sugar if needed. Garnish with lots of chopped nuts of choice. Serve it warm or chilled. Enjoy!
