Gather the necessary ingredients and place them near the cooking area.

Heat oil in a pan over medium heat and add mustard seeds,let the mustard pop open. Then add cumin seeds, turmeric, curry leaves, and green chilies. Add onion and sauté for 2-3 minutes, Add peas, carrots and fry for 2-3 minutes.
Add grated potatoes and fry for 2-3 minutes. Add curry powder and stir.
Reduce the heat. Add salt and toss. After 2-3 minutes, turn off the stove. Add coriander leaves. mash them. Filling is ready. Let it cool to room temperature. - 4
To wrap: Dip the rice paper in lukewarm water. When it becomes pliable and soft, take it out and place it on a plate or on a chapati stone. Cut each rice wrap into 4 quadrants. Place 1 tablespoon of filling on one side Fold the wrap. Push the filling to the side and fold. Fold again. Seal it with maida paste to form a triangle.

Shallow frying-
place a cast iron skillet over medium heat. Add about1/4c oil. Place the stuffed ravioli/samosa on the skillet. Brush one tsp oil on each. Reduce the heat. Fry on both sides. The color will change. Remove th from the skillet. You may eat them as they are like a samosa or serve as a ravioli with a tomato sauce.
Take tomato sauce in a bowl. Drop the ravioli in the tomato sauce. Taste and serve
