Tomato Soup with Arrowroot Flour

Arrowroot flour is a versatile ingredient made from the root vegetable arrowroot which is shredded, dried and made into fine powder. The original colour is creamy baige but while processing, it is bleached to a clear white colour.
Arrowrootflour is used for fasting or vrat or upwas recipes as it's a root vegetable source. It's used to make tikkis, cutlets, fried recipes, poori, parathas and pancakes. In the food industry, it is used to thicken creamy soups and gravies, for crispy texture in fried snacks, in ice creams, jams, jellies and ketchups as a coagulant. It absorbs moisture so keeps savouries crispy. It's a source of energy and carbohydrates along with some micro nutrients. I have used it in Tomato soup which is a winter special and so delicious.This is my recipe, you can add variations.

Steps

First, boil 2 cups of water in a deep pan. Then cut the large tomatoes in 4 pieces. Slice the other vegetables into halves.

Add the vegetables and garlic to the boiling water. Cover and cook on medium heat till the veggies are soft.

Cool to lukewarm temperature. Strain the water in another bowl for later use. Remove the skins of larger tomatoes.

Transfer to a mixer jar and grind to a smooth paste. Then add again to the sauce pan along with the reserved water, 1 cup more water, salt, sugar, spices and mix well. Slow simmer for 5 minutes.

Mix in the arrowroot flour paste, seasonings and let it thicken for 5 minutes. Finish with fresh cream. Serve with choice of bread, toast or savouries. Enjoy.
