Ingredients

Serves 4 servings
  1. 5large eggs
  2. 1.5 bundlesglass noodles (about 2.5 ounces or 70 grams)
  3. 5green onions
  4. 1 tablespooncornstarch
  5. Seasonings
  6. 1 teaspoonsoy sauce
  7. 1 teaspoonsalt
  8. 1/2 teaspoonwhite pepper

    Prepare all the ingredients.

    Soak the glass noodles in water until softened, then cut them into small pieces with scissors and set aside.

    Wash the green onions and chop them finely.

    In a bowl, combine the eggs, seasonings, and cornstarch. Whisk until well mixed.

    Add the prepared glass noodles and chopped green onions to the egg mixture.

    Heat a nonstick skillet and add 1 teaspoon vegetable oil. Spoon the egg mixture into the pan and spread it out with the spoon.

    Cook until the surface is set, then flip to cook the other side.

    Fold each piece in half to form a dumpling shape.

    When the kids get home from school, quickly fry up a batch.
