Farro Soup with Chickpeas and Swiss Chard

Fill a pot with water and bring it to a boil. Add prepared vegetable bouillon or make vegetable broth following your preferred recipe.

In another pot, heat a drizzle of oil and add a sliced onion. Once the onion is fragrant, add the cooked chickpeas and Swiss chard cut into small pieces. Finally, add the farro and let it toast lightly.

Toast the farro and season the vegetables in the same pot, adding pepper, salt, and spices to taste. I love adding a little paprika to this kind of dish.

After 5-6 minutes over high heat, pour the vegetable broth into the pot with the vegetables and farro and bring it back to a boil. Cook everything together, stirring occasionally, for about 30-40 minutes, depending on the farro's cooking time and how much broth you want in your soup.
