Boil the eggs. While the eggs are boiling, prepare the pepper spice mix. Heat a pan and add 1/2 tablespoon urad dal, 1 tablespoon whole coriander seeds, and black peppercorns. Add dried red chilies and curry leaves, then roast everything. Let the mixture cool slightly. Once the eggs are boiled, turn off the heat, peel them, and cut them in half.

Coarsely grind the roasted spice mix. Heat a pan on the stove, add oil, and let it heat up. Add urad dal and mustard seeds, then add curry leaves and dried red chilies. Add the boiled eggs and lightly fry them.

Turn the eggs to fry on all sides. Sprinkle the ground pepper spice mix over the eggs, add salt, and mix well. Turn off the heat. Add chopped cilantro and lemon juice, then mix everything together. Your tasty Egg Pepper Fry is ready.
