Ingredients

  • 2 cups + ½ cup all-purpose enriched wheat flour
  • 1 1/2 teaspoonsyeast
  • 1 tablespoonextra virgin olive oil
  • 1/2 tablespoonsalt
  • Tomato sauce:
  • 2 cupstomato puree
  • 2 clovesgarlic, minced
  • 1 teaspoonchili powder
  • 1 1/2 tablespoonsextra virgin olive oil
  • 1 teaspoonoregano, finely chopped
  • 1 tablespoonbasil, chopped
  • Required Salt
  • Topping:
  • 1 cupmushrooms, finely chopped
  • 1 cupolives, chopped
  • 1 cupmozzarella cheese, grated

    Make a checklist. Keep the necessary items near the cooking area. Preheat oven to 430 F/230 C.

    In a bowl, add yeast, 1 tablespoon sugar, and 1 cup warm water, whisk and keep in warm place.
    In a large bowl, mix together the flour, salt, and olive oil. Add the yeast mixture little by little and combine together with your fingers or a spatula. Knead the sticky dough. Sprinkle flour on a chapathi stone. place the dough on the floured surface and; sprinkle flour on top and knead. Make a soft silky smooth dough. Apply oil on top and cover and rest for 2 hours. The dough will double in size.

    Take it out and knead again for a few minutes. You should have a soft dough. Sprinkle flour on the chapati stone and place the dough; sprinkle flour on top and knead. Roll the dough with a rolling pin. Let it be ½ centimeter thick. No need to stretch. Cut small circles using a cookie mold or something. Press with your fingers. You can also poke holes. Apply oil on the crust with a brush. I placed a layer of small crusts on a silicone mat.

    Sauce: Puree the tomatoes in a blender. Heat oil in a heavy bottomed pan over medium-low heat. Add garlic. Do not let it brown.
    Add tomato puree, chili powder. Basil. Add oregano and stir. If fresh is not available, you can add dried Italian herb mix. Switch off the stove when the sauce is 90% thick. transfer the sauce to a bowl

    Place the mat with crusts on a baking tray and bake for 5 minutes. Remove and spread 2 tablespoons of sauce and 2 tablespoons of toppings (your choice of toppings, desired amount).

    Bake the pizza bites in the pre heated oven until the cheese melts. Take out. I made a total of 22 pizza bites. If you want it spicy, sprinkle with fresh pepper powder or chili flakes. You can sprinkle more cheese if you want. Share and enjoy
