Ingredients

Prep 5 minutes, cook 45 minutes
2 people
  1. 2whole chicken thighs, 1/2 pound each
  2. 2russet potatoes, cut in french fries
  3. 2sprays of olive oil
  4. 2shallots
  5. To make the curry:
  6. 1 Tbsshredded coconut flesh, toasted
  7. 1kemiri nut, toasted
  8. 1 Tbspalm sugar, toasted
  9. 1 cupwater
  10. 1lemon grass stalk
  11. 1 Tspeach cumin, galangang, red paprika powder, turmeric, soy sauce, coriander, pepper sauce like sambal oelek, garlic, ginger, makrut leaves
  12. Equipment:
  13. Cast iron dutch oven, airfryer oven
  14. Cost: chicken $1.77, curry, other 23 cents, $1 dinner

Cooking Instructions

Prep 5 minutes, cook 45 minutes

    In dutch oven with lid, roast coconut flesh, crushed kemiri nut and palm sugar till golden. Add other sauce spices. Add water to make sauce.

    Lay chicken thighs on top, sauce on top, immerse with water, bring to boil.

    Simmer 45 minutes. Meanwhile, rotisserie french fries in airfryer till golden, serve with curry sauce over chicken and french fries.
