Rice pilaf is yummy and not super complicated. I'm low carb now but I'll still make my family rice as a side from time to time. I believe using Jasmine rice is the key!

Simple Carrot and Onion Rice Pilaf

Rice pilaf is yummy and not super complicated. I'm low carb now but I'll still make my family rice as a side from time to time. I believe using Jasmine rice is the key!

Ingredients

  1. 2 tbssalted butter
  2. 1/2Vidalia onion - finely chopped
  3. 2small carrots -diced to 1/4" pieces
  4. 1 cupjasmine rice
  5. 1.5 tsproasted chicken better than bouillon (can use vegetable to keep this vegetarian)
  6. 1 1/4 cupwater

Cooking Instructions

    Melt butter in a medium saucepan over medium heat. Add onion and carrots and cook until onions just starts to become translucent, stirring often. About 5 minutes.

    Add rice to pan. Cook until it begins to smell slightly nutty, stirring frequently. About another 5 minutes.

    Add better than bouillon and then water. Stir to combine everything together. Cover, reduce heat, and simmer 15-20 minutes or until rice is tender and water is absorbed. Stirring once or twice to prevent sticking (that's right, I'm saying you can remove the and stir!).

    When done, fluff with a fork, serve immediately and enjoy!

    Note: alternative to better than bouillon and water, you can you chicken or vegetable broth as a 1:1 substitute for the water.
