My step mom used to make these all of the time. Made these for my family and husband took the leftovers to work. Needless to say, I had to make copies of this recipe for just coworkers. 😀

Poor man taco night.... i make this often , everyone in my house love tacos / nachos... I make this around the same time I make a big bowl of salad... and use some of the lettuce and tomatoes from that, I do have some picky eaters so grabbing a few extra things like a cucumber , mushrooms (when iam grocery shopping is no big deal.)for a salad. To do a pasta Night with salad .... that way all of my lettuce and tomatoes are being used up and I have no waste and two dinners.... it’s just something I always do if I make something like this or tacos ... ( this happens to be a favorite of mine , quick easy and cheap)
