Cottage Cheese Pancakes

Mix the whole-wheat flour, sugar, salt, baking powder and mix well in a bowl

Break the eggs into the bowl and start whisking to blend the dried and wet ingredients together

Pour in the bubling mineral water (this step is optional if you want to keep your batter thick)

Mix in the cottage cheese and finally the vanilla

Melt the butter on the pan with medium heat and then low heat (avoid burning the butter). Or if you prefer safer/vegan method you can use vegetable oil

Use a sauce spoon with a mouth or a scoop spoon to measure each pan cake evenly, fry each side until nicely golden
