In a pot, melt the butter with the oil.

Add half of the chopped onion and reserve the other half for garnish.

Add the lamb chops, season, cover, and cook over medium to low heat without adding any water.

Once the meat is cooked, squeeze half of the lemon and drizzle the juice over the meat.

Meanwhile, peel the potatoes and cut them into sticks.

Salt them and fry in hot oil, then drain.

Serve the lamb chops with the fries and sprinkle with the remaining chopped onion and cilantro.
