Ingredients

  • For the gluten-free crust:
  • 1 1/4 cupsbuckwheat flour (about 150 grams)
  • 3eggs
  • 3/4 cupalmond milk (about 200 ml)
  • For the filling:
  • 3eggs
  • 3/4 cupsoy cream (about 200 ml)
  • 1/3 cupalmond milk (about 100 ml)
  • 3 1/2 ozturkey bacon (about 100 grams)
  • 1 3/4 ozreduced-fat shredded Emmental cheese (about 50 grams)
  • pepper
  • nutmeg

Steps

  1. 1

    Prepare the crust by mixing the ingredients in order. Knead until you get a smooth ball.

  2. 2

    Roll out the dough and line a tart pan. Prick the bottom with a fork. Chill for 30 minutes.

  3. 3

    Preheat the oven to 350°F (180°C).

  4. 4

    Pre-bake the crust by baking it blind for 10 minutes.

  5. 5

    Prepare the filling by mixing the ingredients in order, stirring between each addition.

  6. 6

    Pour it over the tart crust and finish baking. Bake for 30 to 35 minutes at 350°F (180°C), until the quiche is golden brown.

  7. 7

    Enjoy immediately with a green salad with vinaigrette 😋
