Place a pot over medium heat. Add the water, carrots, potatoes, and lentils. Cover the pot and cook until the vegetables and lentils are tender.

Heat a skillet over medium heat. Add the olive oil and onion, stirring occasionally until the onion softens. Add the celery and cilantro, and stir to combine.

Once the soup is cooked, add the onion, celery, and cilantro mixture to the pot. Stir well and let the soup simmer for another 10 minutes, then remove from heat.

Blend the soup until smooth. Serve the hot soup in bowls with toasted bread.
