Rinse the chicken and place it in a pot of cold water. Bring to a boil to remove impurities and blood. (You can add green onions, ginger, or rice wine to the water if you like, but it's optional.)

After blanching, rinse the chicken under cold water to remove any remaining impurities or bone fragments. Soak the shiitake mushrooms in water until softened and set aside.

Place the chicken and ginger slices in a pot. Fill with water and start cooking. Pour in the soaking liquid from the shiitake mushrooms as well.

Slice the bamboo shoot. Prepare the other ingredients. Take half a can of preserved winter melon (with its liquid) and cut it into small pieces.

Once the chicken comes to a boil, add the shiitake mushrooms, bamboo shoot slices, garlic cloves, and preserved winter melon with its liquid. Continue cooking for 20 minutes.

Season with a little salt, then simmer for another 10 minutes.
