In a bowl, combine the barley semolina, olive oil, salt, and yeast.

Add the warm water and mix to form a dough.

Mix in the seeds (anise or nigella).

Knead the dough for 1 to 2 minutes; it will be a bit sticky.

Shape the dough into a ball, cover with a kitchen towel, and let it rest for 1 hour. The dough will become less sticky and easier to handle.

Punch down the dough. If it's too firm, add a little water, then roll it in barley semolina.

Sprinkle your work surface with barley semolina, place the dough ball on it, and sprinkle more semolina on top.

Flatten the dough into a round flatbread about 1/2 inch (1 cm) thick using your palms.

Cook the flatbread on a cast iron griddle or a nonstick skillet on both sides.
