Ingredients

3-5 servings
  • 30 gcumin seeds
  • 15 gground cumin
  • 20 gchili flakes (deseeded)
  • 20 gfine chili powder
  • 30 gtoasted white sesame seeds
  • 5 gSichuan peppercorns (optional)
  • 5 gblack peppercorns
  • 5 ggarlic powder or dried minced garlic
  • 5 gonion powder or dried minced onion
  • 10 gsea salt • 10g sugar
  • 5 gfive-spice powder (optional)
  • 1Chinese crumbly cookie (Tao Su), about 30g, crumbled

    Get your ingredients ready.

    Toast the spices
    In a dry pan over low heat, toast cumin seeds, sesame seeds, peppercorns, and dried garlic/onion for 2–3 minutes until fragrant.

    Break the cookie
    Crumble the Tao Su into small chunks.

    Blend
    Add everything to a blender or spice grinder. Blend to a coarse powder—or leave it a bit chunky for texture.

    Transfer to a clean, airtight 16 oz jar.
    Store at room temp for 1 month, or refrigerate for up to 3 months.
