Back home we have a dear friend Coco that the kids absolutely loved. This is our version.

This delicious recipe was inspired by my niece who made me drool when she described such a sandwich she'd eaten while on vacation. The tangy cherry sauce can be made a day or two ahead of time and would also be a yummy topping on baked ham or pork chops! I make my own deep fried crispy onion strings for this, but you could substitute the Frenches type that come in a can.

I have always liked potatoes of all kinds and wanted to create a recipe that would be quite flexible. It also turned out remarkably easy to make.This is one of those recipes that you could throw in a bunch of different stuffs. The peeled tomato is a personal thing which I recommend you try.Try various combinations of vegetables, spices, meat and fish. A different taste each time. Enjoy!

Sweet potatoes are great as a dessert or savory or just about anything is possible with them. One of my favorites is sweet potato pudding which I will be adding later.

Made this for dinner last night. had a little trouble with it but it came out good. The sauce was awesome, terragon brought out the taste with the lemon pepper. good dish I must say ;-)

Delicious masala chicken...my go-to recipe when I'm out of ideas.
