Lahsuni spicy Urad Dal – a simple but delicious vegan Indian daal recipe with black gram lentils in a fragrant Indian gravy that makes for the perfect comfort food dish to add to your weeknight or weekend dinner rotation. Gluten-free.

First of all, wash the split urad dal with 3-4 waters and soak it for 10 minutes. Then add 1 glass of water and cook it in a pressure cooker on low flame for 2 whistles(till soft and tender).

Now prepare the green masala to add to the dal. Heat oil in a pan and add mustard seeds, cumin seeds, asafoetida and dry chilies. Then add ginger, chilies and curry leaves. Then add onion and sauté for few seconds.

Now add tomato and garlic chutney and mix well. Add remaining spices and saute till oil separates.

Now add 1 cup of hot water to it, mix it and add the boiled urad dal. Then let it simmer for 5 minutes. When it thickens a little, add coriander and remove from heat.

Now take the prepared urad dal in a bowl. Prepare second tadka and add it to the dal on top. This is how double tadka lahsuni urad dal is ready. It is served with millet roti, salad, buttermilk, pickle and spring onion.
