Boil the pig ear and liver on 8 cups of water with salt and peppercorn until it gets tender. Don't overcook.

Once it gets tender, discard the water and drain. Rub a little salt all over the boiled ear.

Grill the ears until it turns a bit crispy but do not burnt as it will give a sour taste

Let it cool then cut into small pieces.

Meanwhile, combine mayonnaise, ginger and onion in a mixing bowl and stir.

Add chili and pepper to taste. Toss gently.

Start to put in the sizzling grill and serve
