Ingredients

30 minutes
2 people, dinner
  • 1eggplant, peeled, 3/4” thick sliced
  • 1shallot, peeled, slices
  • 4 stripsthick smoked pepper bacon
  • 2fresh farm eggs
  • 1 cupbreadcrumbs
  • 4 Tbscrumbled parmesan cheese
  • 1 Tbspeppersauce
  • 2 cupssnowpeas, whole
  • Sprinkle dinner with thick sweet soy sauce topping
  • Equipment: cast iron skillet, dinner plate for breading, glass brown to beat eggs
  • Cost: eggplant farmfree or $1, bacon $1, eggs 40 cents, snowpeas $1,,shallots, parmesan, other 60 cents, per dinner $2

Steps

30 minutes
  1. 1

    Melt the bacon and peeled shallot slices in a cast iron skillet, low heat. Save peels to make onion bouillion.

    Beat the eggs with parmesan cheese and peppersauce in glass bowl.

    Coat the peeled eggplant slices with egg, then breadcrumbs, then egg again, then breadcrumbs again, fry in cast iron pan in bacon fat till golden, flip, fry other side till golden. Save the peels for pickling.

    Place on serving dish in 350F degree oven while sautéing the snowpeas.

    Sautee snowpeas in bacon fat and shallot slices, low heat, covered, 15 minutes till cooked.

    Serve big dinner of breaded eggplant and snowpeas, drizzle thick soy sauce over, enjoy.
