Make a checklist. keep all necessary items close by. 1. Preheat oven to 350°F (175°C). if using metal muffin box, use paper inserts. I used silicone muffin maker.

In a bowl, mix the wet ingredients Yogurt, almond milk Olive oil, applesauce
Maple syrup (or date syrup), vanilla extract whisk to combine. I did not add maple syrup. add chia seeds whisk - 3
In a large bowl, whisk together Barley flour, Whole wheat flour. Baking powder, baking soda
Cinnamon, nutmeg, flax meal. keep a sieve over the bowl containing wet ingredients. Add the dry mix little by little to the sieve and sieve. first sive 1/3 of the dry mix, mix with a spatula. repeat the process until you sieve all dry mix into the wet. Mix gently. Do not over mix - 4
Fold in chopped peaches and optional add-ins like nuts

Keep the silicone muffin maker over a baking tray. Spoon batter into the muffin cups, filling each about 3/4 full. Top with oats or a peach slice.(optional). bake for 20–25 minutes or until a toothpick inserted comes out clean.

Remove from the oven. Cool for 5=10 minutes, then transfer to a wire rack to cool completely. transfer to a serving plate. Enjoy the delicious healthy sugar free muffins

Blood Sugar Tips
• Pair with plain yogurt or nuts for extra protein and fat to slow glucose absorption.
• Use smaller peaches and monitor portion size if you're closely watching blood sugar levels
