One fish dish that always stands out to me whenever she served it up at the dinner table (among other dishes), was this fried fish and tomato fish sauce. It’s pretty much your favorite fish, deep fried/panfried/air-fried/grilled, whatever your preference…. And serve with this amazing Tomato fish sauce! Fresh, sweet, tangy, savory, and a bit spicy if you so choose.

Fish prep: clean fish with salt & rinse with water. Pat dry before lightly season both sides with sea salt & ground black pepper.

Spray with neutral oil on both sides & skin. Cook in air-fryer with foil on bottom @ 390F for 20-25 minutes (no need to flip) or until golden.

While salmon is cooking make the sauce: sauté garlic, shallots, and white onions until onion translucent. Then add diced tomatoes, sugar, fish sauce, ground black pepper.

Sauté for 4-5 minutes, then close lid and let simmer on low for 3 minutes.

Add green onions and couple whole Thai chili (if you want spicy, you can mince the chili). Toss evenly, then let simmer uncovered for 2 minutes or until sauce is reduced. Taste and adjust.

Add sauce to plate, then top with cooked salmon. Enjoy!
