Fusion cuisine is generally popular particularly in modern dining . Fusion cuisine allows people to try new flavors & combinations while still enjoying the familiar taste .
Here is an Indo - Chinese & Indo - Western fusion of our very own , most popular South Indian Medu Vada .
There is a roadside Cafe called Lokmanya in the Western Suburbs of Mumbai that is serving these fusion Medu Vada along with their regular South Indian menu . People , usually on weekends flock to this joint to savor these fusion delicacy .
I have tried to highlight their fusion taste by adding spring onions , for extra crunch in it9 . With spring onions, it tastes amazing.

Assemble all the ingredients. Cut 2 medu vada into 8 small pieces & keep aside. Cut 4 medu wadas horizontally & keep aside.

Honey chilli medu vada : Take oil in a pan, add onions saute, add tomatoes & cook till tomatoes turn soft, add capsicum & saute but don't make them soft.

Add Schzwan sauce & saute. Add water & cook till the sauce thickens. Add honey & cook at a very low temperature to give it that smoky flavor.

Add medu vada pieces & mix. Add chopped coriander. Take honey chilli medu vada in a plate & garnish with chopped coriander & spring onion greens. Serve immediately.

Medu vada Donut sandwich bites : Heat butter in a pan. Add onion, ginger, garlic paste & capsicum & saute. Add tomatoes & cook till they become soft.

Add all the masala & 1 tbsp water so masala do not burn.

Place 4 medu vada halves, facing the cut portion downwards over the masala, press lightly & cook for a minute.

Turn over & cook over medium flame for 30 seconds.

Place 1 piece of vada on the other half, to form a sandwich. Remove in a plate & garnish with chopped coriander & chopped spring onion greens.

Note : When honey is heated on slow flame, it gives a slightly smoky flavour. Don't heat honey on high flame or it will burn & ruin the dish.
