Steps

Wash and soak all the lentils for a good amount of time or preferably overnight.

Dice green pumpkin and eggplant into small cubes.

Heat oil in a pot. Add bay leaves followed by the chopped onions. Saute onions and the ginger-garlic paste added until they are golden brown and crisp.

Add mutton pieces, sear well. Cook on a medium high heat keeping a proper check on it. Stir at regular intervals to prevent it from burning and getting stuck to the bottom. Also add powdered spices. Add garam masala too.

Add tomatoes, cook until soft.

Add lentils, pumpkin, eggplant, fenugreek leaves and water. Mix well.

Simmer on a low heat until mutton, lentils and vegetables are no longer raw and a bit sauteed. Pressure cook with a glass of water or as required.

Let the pressure settle down on it's own before opening the lid of the cooker.

Mash the lentils, meat and vegetables mix slightly for a creamy texture.

Adjust salt, garnish with coriander and simmer for about 5-6 minutes. Serve it piping hot alongside both Rice and Rotis. Enjoy!
Tips
For added flavour, you can pressure cook the Mutton before adding the Lentils and the Vegetables.
