Inspired by @Madhubish27 Di made this mushy potato and coconut curry. It was delicious to have with hot steamed rice.
Steps

Wash,peel and cube the potato. Break and grate the coconut. Slit the chillies.

In a Kadai /pan heat mustard oil, add Panch Phoron, once it crackles, add the green chillies,sauté for 2-3 seconds and then add the potatoes. Sauté it and add the salt too. Cook for about 5-10 minutes.

Add the grated coconut and turmeric and mix it well. Then add enough water as needed to cover and cook for about 10 minutes or until the potato becomes soft and mushy. Add sugar in between the cooking process. This is a dry kind (makha makha) of curry, so once the water dries off, your curry is done. Serve it with hot steamed rice.
