Ingredients

4-8 hours
4 servings
  • Fry in a pan
  • 1White onion (150g)
  • Packetvegan mince (see note)
  • 1 tbspSpicy Italian seasoning
  • Slow cooker ingredients
  • x2 tins of chickpeas (400g can)
  • 90-170 gsun-dried tomatoes in balsamic vinegar brine (drained and sliced with a little dollop of the balsamic vinegar)
  • 4garlic cloves minced
  • 200 gcelery chopped
  • 500 gwhite potatoes chopped into small mouthful bites
  • 1 ltrVeggie broth (I use OXO)
  • 60 gnutritional yeast
  • 1 tspchilli flakes
  • 1 tbspSmokey Paprika
  • 1 tbspSpicy Italian seasoning
  • Salt and petter
  • 200 gChopped Kale (15mins before the end of cook time)
  • Once cooked
  • 300 gSilken tofu or vegan Cream
  • 40-50 gfresh basil - ripped
  • Toppers you can add once served: Spring onion, sesame seeds / mixed nuts/seed mix, hint of cajun spice, Vegan cheddar/Parmesan cheese

Steps

4-8 hours

    Fry the onion in a pan

  2. 2

    Add the vegan mince/sausage meat with a generous sprinkle of Spicy Italian seasoning and fry until a little brown

  3. 3

    Add onions and mince to your slow cooker along with all the other slow cooker ingredients, mix, cover and cook on high for 3 hours or on low for 6 to 8 hours - I highly recommend the slow setting, it cooks a lot better with deeper flavours.

    15 minutes before the end, stir in the shopped kale to soften

  5. 5

    Once cooked, stir in the basil

  6. 6

    Add the silken tofu to a blender along with some big scoops of the veg from the slow cooker to blitz and make the a thick creamy sauce - you can can add more of less veg depending on how you like your soup consistency - I like mine think

  7. 7

    Add the blitz sauce back into the slow cooker and mix. If you like your soup even thicker you can take a potato masher and just mash some of the chickpeas and potatoes a little more in the slow cooker. Stir.

  8. 8

    Serve up! You can add some toppers such as spring onion, mixed nuts and seeds, cajun spice, Vegan cheddar/Parmesan cheese. And serve with some warm bread or garlic bread!

Tips

* I used Linda McCartney's Vegetarian Lincolnshire Sausages x6 270g for the macros above but you may find other vegan mince/sausage meet available that suits your macros better
