The first time I tried Mahmoos Kataifi, I honestly didn’t know what to expect. A friend mentioned it was a traditional Saudi rice dish — hearty, spiced, and super comforting. And she was right! It’s one of those one-pot meals that fill your home with the most amazing aroma and everyone curious about what’s cooking, making everyone impatient for dinner!
I made it on a lazy weekend when I didn’t feel like cooking something fancy but still wanted a warm, flavourful meal. The flavours come together so perfectly — savoury, slightly tangy, and deeply comforting.
It’s a nice change from the usual biryani or pulao — a little rustic, a little earthy, and just so satisfying. It’s hearty, wholesome, and perfect for when you’re craving something that feels like a warm hug in a bowl. The best part? You can easily tweak it — add your favourite meat, throw in some fried onions, or top with toasted nuts for that lovely crunch.

Ingredients

45 minutes
4-6 servings
  • 5-6onions, sliced, thinly
  • 1/4 cupolive oil
  • 5chicken, leg quarts
  • 3bay leaves
  • 5dry limes
  • 2 stickscinnamons
  • 5cardamoms
  • 5cloves
  • 1star anise
  • 2-4bulbs garlic, halved
  • 2 tsp.pepper powder
  • 2 tsp.cardamom powder
  • 1 tsp.turmeric
  • To taste salt
  • 2 tsp.coriander powder
  • 1 tsp.onion powder
  • To taste paprika
  • 1 tsp.garlic powder
  • As required water
  • 4-5green chillies
  • 4 cupsrice, washed, soaked 20 minutes, drained

Steps

45 minutes
  1. 1

    Heat oil and sauté the onions till brown and jammy.

  2. 2

    Add chicken and sear till colour changes.

  3. 3

    Add all the whole and powdered spices. Mix well.

  4. 4

    Add enough water to cover the chicken. Bring to a boil.

  5. 5

    Cover and cook till chicken is about 85% done.

  6. 6

    Add green chillies, mix; cover and simmer till chicken is cooked.

  7. 7

    Remove chicken, brush with stock and broil till nice and brown.

  8. 8

    Add rice and mix. Cook till water is almost absorbed.

  9. 9

    Cover and simmer on low heat till rice is cooked.

  10. 10

    Switch off flame and allow to rest 10 minutes.

Tips

Fluff rice and serve topped with chicken and desired side.
