Cook the Dal :

Pressure cook soaked moong dal with 1½ cups water, turmeric, and salt for 2 whistles or until soft.
(You can also cook in a pan for 10–12 minutes until slightly thick and creamy.)

Prepare the Tempering :

Heat oil in a pan. Add mustard and cumin seeds.
When they crackle, add garlic and green chili.
Sauté until garlic turns light golden. - 6

Add Tomato & Spices :

Add chopped tomato, hing, red chili powder, coriander-cumin powder, and a little salt.
Cook until tomato softens and releases oil. - 9

Mix the Dal :

Add the cooked moong dal and mix well.
Add a little water if needed to adjust consistency.
Simmer for 3–4 minutes so flavors blend beautifully. - 12

Turn off the heat. Add lemon juice and garnish with fresh coriander.

Tips
∆ Roast garlic lightly for a smoky flavor.
∆ Add spinach or methi leaves for variation.
∆ Keep dal thick for rotis or thinner for rice.
