My attempt at gluten and dairy free orange chicken for dinner tonight. I'm serving it with rice and broccoli. Has a very strong orange flavor. I thought it was delicious.

Steps

25 min

1

Combine 1 cup corn starch, salt, onion powder, paprika, and chicken in a large Ziploc bag. Shake, coating the chicken.
2

In a large skillet, with a couple tbsp of olive oil, cook chicken until done.
3

While chicken cooks, combine juice, zest, garlic, ginger, vinegar, sugar, tamari, red pepper flakes, and a corn starch slurry in a bowl.
4

When chicken is cooked through, reduce heat to low, pour sauce into skillet and let simmer until getting thick.
5

Add cashews (I like them for the texture) and stir, cook 2-3 more min.
6

Serve over rice with broccoli. Garnish with green onion and/or sesame seeds

Tips

If you want a lighter orange flavor use 1 orange instead of 2
