I do love sausages but they have to be good qualiity not just oil and breadcrumbs I like meat and as little adatives as possible. These litererallly cost 20% of the store bought ones and are twice as good - just try once and then you can add your favourite herbs and spices - the skys the limit. :)

Ingredients

about 1 kg
  • Pork: 1 Kg fatty pork shoulder (about 20% fat) - remove any silver skin
  • 1 TbspSalt or 1.5 of sea salt
  • 50 GrDry Breadcrumbs
  • 1/2 TbspFresh Sage or 1 tbsp dried
  • 1/4 tspGround Nutmeg:
  • 1/2 tspGround Mace:
  • 1/2 tspWhite Pepper:
  • 1/2 tspBlack Pepper:
  • Cayenne Pepper: 1/4 tsp (optional, for a little heat)
  • 100 mlIce cold Water
  • About 1 meter of natural hog casings

Steps

    Prepare the Casing as per instructions. Then Chop the meat into pcs that will fit into mincer feed Tube. Add the seasoning and mix well then put into freezer for about 1 hour - you want it very cold around 10c perfect. You can keep this mix in the fridge for a day or freeze to use later.

    Add the Water and bread crumbs and mix again. Then using you mincer grind the meat between 5mm and 9mm depending on how course you want it. I like fine so 5mm.

    Next add the sausage hose to the mincer and slide on the casing. Tie off the end and then you want to slowely stuff without any airbubbles in a contiuous long sausage the you curle around as you go - NO LINKS please :P (I know I did not make one sausage today but the only caseing I could get were short - still tastes amazing :P)

    Now you can chop into portion sizes you want. Re-curl then put into freezer bags and freeze or cook. I like to use a cash iron pan and put onto a medium heat so even cooking. Then Serve over potaoes, fried onions and LOTS of gravy or make into the perfect breakfast sandwich with an egg ontop. ENJOY :P

Well I started with Cookpad during Covid....... Guess alot of us did, Amazing Site great to share with passitionate people. I have no formal training but have eaten in some of the best fine dinning restraunts in the world and also learnt from My mum and Grandma with "a pinch of" and "about a handfull" - if we share we love.
