I absolutely love anything pumpkin. Because I'm trying to limit my sugar intake this year, I wanted to make a Thanksgiving dessert that tasted great but is still low calorie and low sugar. Although nothing can beat Granny's homemade pies, this is a great alternative.

Ingredients

7-8 parfaits
  1. 2 Cans (29 oz.)Pumpkin Puree
  2. 4 scoopsVanilla Whey Isolate Protein Powder
  3. 1 cupCalorie Free Maple Syrup
  4. 1sleeve (or 9 sheets) Graham Crackers (Crushed)
  5. 1 (13 oz)Can Light Whipped Cream
  6. 2 tablespoonsPumpkin Spice

    Mix pumpkin puree in the bowl with whey protein isolate, syrup and pumpkin spice. Blend till smooth and spice is evenly distributed.

    Spoon mixture into parfait cups and layer with crushed graham crackers and whipped cream. The layers can be as thick or thin as you want. I prefer a thicker bottom layer.

  3. 3

    Garnish with pumpkin spice and graham crackers, if desired. Chill for half hour for a pie like consistency.

Tips

I used the canned whipped cream for the sake of saving time, but it will deflate over time. If you want it to stay fluffy and tall, take whipped topping from the freezer aisle and pipe it on top instead. Making your own whipped topping works great too.

Whey isolate tends to be the better option for protein choice, but you can substitute this for any whey protein or Greek yogurt if preferred.
