Meatballs in Almond Sauce! 🧄🍞🧅

I wanted to try making meatballs with a sauce different from the usual tomato one, and I had some toasted almonds that didn’t turn out very good (they were a bit soft for my taste), so I decided to make this sauce instead, and it turned out really tasty!!
The meatballs are homemade; I always make them myself by buying ground meat and mixing it with garlic, parsley, egg, salt and breadcrumbs.
Since we’re trying to eat a little healthier during the week, I buy ground turkey, but mixing pork and beef makes them juicier! 😉
I think this dish could totally be on a Thanksgiving table!!

I prepared the meatballs the day before, so all I had to do was fry them and make the sauce.

In a skillet, we’ll add plenty of oil to fry the meatballs. I use a mild olive oil, but you can also use sunflower oil, canola oil, or any mild one.

When the oil is hot, place the meatballs in the skillet to fry them.

Once they’re nicely browned on all sides, take them out and place them on a paper towel so it absorbs the excess oil.

The next step will be to start making the almond sauce! First, peel and chop the onion so you can sauté it. You can cut it however you like because everything gets blended afterward 😉.

We’ll peel and chop the garlic cloves as well.

We’ll remove some of the oil we used to fry the meatballs, but we’ll leave a little bit to sauté the onion first.

In the meantime, we can start cutting the slice of bread into small pieces so we can sauté it as well.

Once the onion is almost ready, we can add the garlic. Let it brown, and once everything is cooked, remove it and place it in a bowl for later.

Now we’re going to add a little more oil to the pan to sauté the almonds. Keep stirring them nonstop because they burn really quickly! (I didn’t remove the skins because it was pretty hard to do, and since they were already toasted, I didn’t want to blanch them.)”

Lastly, we’re going to sauté the bread. We’ll add another splash of oil and… into the pan! Once it’s nicely browned, we’ll put it into the blender jar.

Add the rest of the ingredients we sautéed earlier (the almonds, the onion, and the garlic).

We’re going to add a little bit of hot water so we can blend everything and get a sauce-like texture.

Grab the blender and start blending until you get the consistency you want. It’s better to add the water little by little rather than adding too much at the beginning and ending up with a runny sauce. I had to add a bit more water until I got the texture I wanted 😅. Add salt! If you’ve already added some to the onion and everything earlier, taste it and see if it needs more.

And to finish cooking them, in the same pan we’re going to add a splash of extra-virgin olive oil, the sauce, and the meatballs!

We’ll let it simmer a little and… ready to eat!!!! You can serve them with some diced fries, for example 😉!

Honestly, the flavor of the toasted almonds goes really well with the meat… They turned out delicious!! 👌🏼
