Makes enough for 2 dozen empanadas or 2 thick savory pies
  1. 2cooked chicken breasts
  2. 1 1/8 poundsonion (about 1/2 kilo)
  3. 1/2red bell pepper
  4. 2ripe tomatoes
  5. 3 1/2 ouncesolives (about 100 grams)
  6. 2hard-boiled eggs
  7. Filling

About 40 minutes
  1. 1

    Chop the onion, bell pepper, and tomatoes. In a skillet, sauté the onions first. When they turn translucent, add the bell pepper and tomatoes.

    Meanwhile, finely chop the chicken and hard-boil the eggs.

    Next, add the chicken to the skillet and let it absorb the flavors from the mixture. Season with salt and spices to taste. I used paprika, cumin, and pizza seasoning. Let the mixture cool, then add the olives and chopped eggs.
