Peel and chop the sweet potato, wash and chop the bell pepper, and rinse the chickpeas.

Add cumin and coriander to the chickpeas and mix well. Combine them with the veggies on a baking sheet, drizzle with olive oil, season with salt and pepper, and bake at 180 °C for 25 minutes.

Meanwhile, prepare the tahini dressing by mixing all the ingredients until smooth.

Remove from the oven and serve together. Enjoy 😋
