Persimmons are now ripe, so is crunchy watercress, and watercress is rated the most nutritious vegetable in any garden. In combination with cashew nuts, baked persimmons make a gourmet fresh garden salad for holiday dinners.

Trim and wash the watercress, make a bed on a salad platter. Cover liberally with fresh ranch dressing.

Cut persimmons in half, remove crown, lay flat in skillet, add cup of water, high heat. When water evaporates, add butter, turn heat to low, bake slowly.

When hot, Lay baked persimmons over bed of watercress in ranch dressing, sprinkle cashews over, sprinkle lime juice over, serve.
