California Farm Apple Baked Sauerkraut

Apples, onions, potatoes, milk and sauerkraut with sausages, a delicious filling dinner for under one dollar per person and under one hour.

This oven dish stays hot all during the dinner for first and second helpings because the baked hot apple slices on top of the dish keep it hot longer.

Steps

Mash the unpeeled potatoes. Cut each potato in six cubes, cover with water, boil 20 minutes, pour off water, add cup of milk, mash.

Buy or make the sauerkraut. Take out one pound, squeeze dry. Mix with mashed potatoes and milk.

Mix fried onions, sausage, sauerkraut, mashed potatoes, place in oven baking dish.

Buy or make the sausages, crumble or slice, add to slivered onion in cast iron preheated skillet. Add the caraway seeds. Slice onions and sausages thin, fry in fat from sausages till onions are carmelized.

Slice apples, bake in oven dish till soft. Sprinkle with breadcrumbs. Place on top of sauerkraut mash. Bake sauerkraut dish 20 minutes at 350F degrees. Serve hot.
Tips
The apples on top keep the dish hot for second helpings.
