Shakarkandi/ Ranga Alur Puli (seasonal homemade Bengali sweets) is made of sweet potatoes with a tasty coconut jaggery filling inside.
Steps

Microwave and the sweet potatoes, peel, mash well & keep aside.

Add maida to the smashed potatoes, knead well.

In a kadai add grated coconut, stir well.Then add the date palm jaggery, milkmaid & mix well.

Keep cooking over low heat until soft mixture forms, remove from the heat & keep aside.

Take a lemon sized ball from the dough, pat the ball to a small round by using your palm.

Add 1 tbsp of the coconut, jaggery filling & close theriunds to ablong shape puli.Seal the puli properly, so that the filling does not get spill from inside

Heat oil in a kadai & fry the sweet potato puli until golden in colour.

Transfer the puli on the serving plate & serve the delicious Shakarkand puli / Ranga Alur Puli hot
