Restaurant-Style Lehsuni Palak

First wash and blanch the spinach and divide it into 2 parts. Chop half part of it and keep it aside.

Grind the second part with a little water into a smooth paste. Keep this aside too.

Now heat a pan and add 1 tbsp of ghee in it. When the ghee becomes hot, add 1 tsp of jeera. Let them splutter, then add chopped onion and chopped green chillies. Let it fry for about a minute. Then add crushed coriander and 2 tbsp of grated garlic in it. Mix everything well and let it cook further for about a minute.

Now add besan and salt to it and mix it. And fry until the raw smell of the besan goes off. Now add a pinch of turmeric powder and mix it.

Now add the first part of the spinach I.e. the chopped spinach. Mix it well with the fried onions and fry them together on a low flame for about a minute.

Now add the second part I.e. spinach paste to it and mix it well too. Then add half cup of water and mix it well.

Now add some garam masala, salt and mix it well. Cook it further on a medium flame for about 2 to 3 minutes. Now switch off the flame.

Let's prepare the second tadka. Heat a tadka pan; add a tnsp of ghee, when the ghee becomes hot, add some jeera, 2 dried broken red chillies, 2 tbsp chopped or crushed garlic and white sesame seeds. Let them splutter.

Now add this tadka into the palak and gently mix it. Your Lehsuni Palak is now ready to serve. Serve it hot with some steamed rice or parathas.
